For this post, we are moving away from savoury and are posting our first Sweet Treats recipe!
We used a Merry Berry recipe as a guide to make these little biscuits, but we heavily adapted it to use up some oatmeal that we had in the cupboard.
Ingredients:
100g of Butter Softened
50g Caster Sugar
75g Self Raising Flour
75g Oatmeal
½ tsp Orange Extract or Orange Zest.
½ tsp Baking Powder
Method:
1.Pre-heat oven to 180oC (fan 160oC)
2.Grease 2 baking trays.
3. Beat butter in a bowl until soft and add the orange extract or zest.
4. Beat in the sugar and then flour, oatmeal and baking powder
together.
5. Bring the mixture together to form a dough.
6. Divide the dough into 16 walnut sized balls and
place on the prepared baking trays.
7. Dip a fork in water and use to flatten the biscuits.
8. Bake for 15-20 minutes until very pale golden.
9. Leave to cool on a wire rack.
These biscuits are best eaten when they have cooled a little, as when they are still warm they tend to fall apart quite easily.
A handy tip for stopping your biscuits from spreading in the oven is to chill them in the fridge before baking, which as you can see, we didn't do before this batch!
