It's Saturday which means one thing - time to do some serious baking.
Today we are going to be sharing one of my favourite lunches. When I'm at university, couscous is on the menu at least once a week as it is so versitile and cheap.
This recipe is a simple prawn cous cous salad, and serves one.
Ingredients:
1/2 Cup Couscous
1/2 Cup Boiling Water
1tsp Bouillon
Handful of Prawns
Butter for frying or your favourite oil
1/2tsp Garlic Granules
Chilli Flakes - to taste
Handful of Grapes, sliced in half
1 Spring Onion, chopped
1/2 Pepper of your choice, chopped
Method:
1. Put cous cous and bouillon in a bowl. Add the water, fork through the couscous and cover with clingfilm for 15 minutes.
2. Put prawns, garlic granules and chilli flakes in a frying pan with a little butter. Fry until prawns are pink, or if using frozen, until cooked through.
3. Add the cooked prawns, grapes, spring onion and pepper to the couscous, and mix through.
Feel free to add a little lemon vinaigrette, as the couscous can be a little dry.
