This week we are sharing one of my favourite recipes. During my first year of University I lived with a great group of girls in halls and one girl in particular loved to cook just as much as I did.
Now that we are living apart and I no longer get to try all the lovely food that she makes 😢, she was kind enough to share her delicious granola recipe. I have tweaked this a little to suit my own taste and as I wanted it to be a bit more fruity.

The reason I wanted to make my own granola was all the options available without sultanas (which I really don't like) were either £4 or one of their main ingredients was palm oil. Making granola yourself gives you the chance to be kinder to the planet and save money!
20g Freeze Dried Berries
200g Rolled Oats
2 tbsp Chia Seeds
30g Cashes, Chopped
25g Banana Chips, Chopped
100ml Maple Syrup
1 tbsp Coconut Oil
1 tsp Vanilla Extract
1 tsp Ground Cinnamon
Method:
1. Preheat the oven to 140C (fan).
2. Line a baking sheet with greaseproof paper.
3. Combine the oats, chia seeds, cashews, banana chips in a large bowl.
4. Heat the syrup, oil, vanilla and cinnamon in a pan, stirring until boiling.
5. Transfer the liquid to the large bowl and stir until the oat mixture and liquid are combined.
6. Spread the mixture onto the baking sheet and bake for 1 hour - stirring the mixture every 20
minutes.
7. Once out of the oven stir in the freeze dried berries. Your granola is now ready to serve.
A big tip is not to add the dried fruit until after the granola is baked. During recipe testing, I added the dried fruit before baking the granola and I ended up with burnt little pieces of strawberries in my granola! So please don't be tempted to do it all in one go as it isn't worth it.
I tend to mix my granola with some puffed rice to make it go further, and some fresh fruit to start my day right!
