Tortilla Quarters

A few weeks ago, as I was scrolling though instagram, I came across a cooking video. They had a tortilla slit through one side, with 4 different fillings. The tortilla was then folded over itself and then toasted. I decided I just had to try this and thought the combination of beef and guacamole would work well. The result was better than we could have hoped for - full of flavour and so fun to make!

Please excuse the pictures this week - we were so excited to eat I barely had a chance to photograph the food!






Ingredients (makes 6 tortillas):

6 Tortillas

250g Minced Beef

1 tsb Cajun Seasoning

1 Avocado

Juice 1/2 lime

Crushed chilli flakes, to taste

60g Cheese, grated

6 Little Gem Lettuce leaves, washed



Method:

1. Mash the avocado with the lime juice and chilli flakes, set aside.

2. Preheat a griddle or frying pan - no oil needed.

3. Fry the minced beef and cajun seasoning until cooked through, set aside.

4. Cut a small slit through the tortillas, going from the edge up to the middle point.

5. Place a spoonful of the beef on one quarter of the tortilla. Fill the other quarters with the avocado mix, cheese and lettuce respectively. 

6. Fold the beef section over the section above. 

7. Repeat the folding until the tortilla has been folded over itself three times - each section on top of the other.

8. Place the folded tortilla on the griddle or in the frying pan. Allow one side to toast and then flip to toast the other side. Serve.









These were absolutely divine if I do say so myself! They were surprisingly filling and really simple to make. They were also a great way to get the whole family involved with food with everyone building their own tortilla.
